Christophe Louie is a pastry chef and baker, specializing in naturally leavened panettone.
Trained by master panettone maker Mauro Morandin, he works with a living sourdough starter, passed down and maintained daily.

Beyond panettone, he explores with the same exacting standards mastered and essential products — sourdough breads, madeleines and flans — where time, fermentation and the precision of the gesture make all the difference.
