Stepping into our sourdough bakery in Paris is to enter a universe where every product tells a story of time, terroir and technique. Our signature panettone (classico with candied fruits and raisins, orange-blossom with Malaga figs and candied mandarin or two-chocolate with Cuba 65% dark and Madagascar 40% milk) undergo a 72-hour fermentation that yields their unmistakable filante crumb and lasting aromatic depth.

Alongside them, a thoughtfully composed range of naturally leavened breads made from ancient grains, together with brioches, madeleines, flans, travel cakes and seasonal pastries, completes the offering. Each recipe is additive-free, naturally long-keeping and crafted with noble ingredients such as AOP Charentes-Poitou butter and Italian type 00 strong flours, a tangible expression of our commitment to honest, digestible and deeply flavourful baking.
