What is the difference between panettone and pandoro?
Are you a fan of panettone? Then you may have heard of another specialty whose name has similar connotations: pandoro. Another Italian specialty, pandoro is not exactly the same as panettone, although the two products are made in much the same way. So, what’s the difference between panettone and pandoro? Christophe Louie, a Parisian baker specializing in the sale of panettone, tells you more in this article.
Panettone in a few words
Panettone is a traditional Italian brioche, originating in Milan, and emblematic of the festive season. This airy, fluffy cake has a characteristic stringy texture, achieved by fermenting the dough with natural sourdough. Its subtly sweet flavor is traditionally enriched with raisins and candied citrus peel, but modern variants now offer chocolate or other fillings.
Baked in a high mold, it has a characteristic domed shape. Its meticulous manufacturing process and prolonged fermentation give it an appreciable lightness in mouth.

Pandoro in a few words
Pandoro is an Italian brioche from Verona. Unlike panettone, it contains no candied fruit or raisins, and focuses instead on the taste of the dough. The latter, rich in butter and eggs, gives it a soft, melting crumb reminiscent of a brioche cake.
Pandoro is best recognized by its eight-pointed star shape and its surface, generously dusted with powdered sugar, which resembles a snowy peak. In terms of similarities with panettone, pandoro is also traditionally eaten during the festive season.
What’s the difference between panettone and pandoro?
If you’ve ever wondered what the difference is between panettone and pandoro, you’ve probably already figured it out: it’s all down to the origin of the product and the way it’s made. Panettone, the specialty with the greatest international popularity, is most often garnished with candied fruit (or other variants these days), while pandoro is more of a tasting experience focused on its brioche-like taste and its vanilla flavour.
They are also distinguished by their shape: domed for panettone, star-shaped for pandoro.
